Operation & Maintenance

Routine Maintenance

The simple rinse routines that keep a Smoke Zapper or Maxi Grill working — no replacement filters required.

Applies to all Smoki® units · Updated October 24, 2026

Smoki® units are designed to be maintained by restaurant staff in minutes, without costly replacement filters or specialist cleaning visits.

Smoke Zapper

How often Task
Twice a month Rinse the water tank using the attached hose
Twice a year Rinse the drains and pipes

Proper maintenance takes less than 20 minutes per month.

Maxi Grill

How often Task
Routinely Rinse the water tank
Routinely Rinse the three washable filters

The Maxi Grill’s filters are washable and reused. Compared with emission control systems that need regular replacement filters, this saves thousands of dollars a year.

Every 3 months: deep clean

Once a quarter, add detergent and scrub the tank walls with a brush, as well as the routine rinse.

The routine, step by step

The same basic sequence applies to both units. The printable checklists and quick visual guides are on the downloads page.

  1. Power down. Remove the front stainless steel panel and turn the red dial on the electrical box to OFF.
  2. Stop the water. Turn the water supply tap to OFF (horizontal) and wait for the water pressure gauge to read 0.
  3. Drain. Unscrew the black knobs to remove the maintenance panel, then turn the red drain lever to horizontal and let the tank empty.
  4. Wash. Use the yellow hose stored in the unit to wash all the tank walls. On a Maxi Grill, remove and wash the filters too. They can go through the restaurant dishwasher.
  5. Check the water filter. If it is dirty, remove the housing and clean it in a sink.
  6. Close up. Turn the drain lever to vertical (closed), turn the water supply ON, refit the panel and knobs. Maxi Grill filters go back with the black arrows pointing in the direction of airflow.
  7. Power up. Turn the red dial to ON. The tank refills first (about 10 minutes); the pump then starts automatically.

If the pump hums but doesn’t pump

That is usually debris in the pump impeller. See the CM10 pump troubleshooting sheet on the downloads page and the FAQ.

Keep the drain clear

Both units send soot, particulate and grease to the drain, so include the drain line in your kitchen’s regular cleaning schedule.

Your unit’s installation, operation and maintenance manual is the authority on maintenance intervals and procedures. Download it from the downloads page.
